Sugar Free Keto Granola Bars

  • 1 Cup Roasted almonds Chopped (140g)
  • 1 Cup Roasted almonds Slivered (85g)
  • 1 Cup Unsweetened coconut flakes 65g
  • 1 Large egg
  • 4 Tbsp Monkfruit
  • 2 Tbsp Almond butter
  • 1 Tbsp Coconut oil
  • 3/4 tsp Sea salt
  • 1/4 Cup Stevia sweetened chocolate chips


  • Pre-heat your oven to 350 degrees.
  • Line an 8×8 inch sheet pan with parchment paper or foil. We like to leave a little bit hanging over the sides to make lifting them off the tray later a bite easier.
  • In a large bowl, whisk together the egg and monkfruit.
  • In a separate small, microwave-safe bowl, melt the almond butter and coconut oil for about 30 seconds or until the texture is smooth
  • Whisk both mixtures together until well combined.
  • Add in all of the nuts, coconut and salt and stir until well combined.
  • Stir in the chocolate chips.
  • Press the mixture quite firmly into the prepared pan. If you lay a piece of parchment paper on top it makes this process easier and mess-free.
  • Bake for 15 minutes or until the top feels set.
  • Let cool completely to room temperature in the pan.
  • Cut them into your favorite shapes and enjoy or store them for later!
