Ultra Low Carb Vegan Keto Caramels
If you have that craving for caramel, you can satisfy that craving while avoiding the carbs with this low carb vegan caramel recipe. These can be easily packaged and taken with you on the go to avoid the temptation of picking up regular candy from the vending machine.

- 1/3 cup cashew butter
- 1/4 cup coconut oil melted or softened
- 15-20 drops vanilla stevia to taste
- Dash of sea salt
- 1/2 Tbs vanilla
Mix all ingredients together and whisk smooth.
Taste and adjust for sweetness.
Pour into 8 parchment or silicone molds for easy removal when frozen.
Freeze until solid, about 30 minutes to 1 hour.
