Cilantro Lime Marinated Chicken & Zucchini Skewers

Cliantro-Lime Marinade

  • 6 cloves garlic
  • 2 tbsp fresh lime juice about 1 lime
  • 1/2 cup fresh cilantro
  • 1/4 cup oil
  • 1 tsp salt

Keto Kebabs

  • 2 lbs boneless skinless chicken breasts cut into 1-inch cubes
  • 3 medium zucchini sliced thinly long-ways
  • 1/4 teaspoon pepper

Instructions

  • In a large resealable plastic bag, combine garlic cloves, lime juice, cilantro, oil and 1/2 teaspoon salt.
  • Add chicken cubes; seal bag and lightly mix and shake with hands to coat chicken evenly.
  • Refrigerate for at least 30 minutes or overnight for the best flavor.
  • Drain the chicken, discarding marinade.
  • Thread one skewer through the bottom of a zucchini slice, slide a marinated chicken cube onto the skewer, and fold over the zucchini slice on top of the chicken, threading the skewer through again. Repeat this until the skewer is full, and make 8 kebabs.
  • Brush the skewers with the remaining oil; and sprinkle with salt and pepper.
  • On a greased grill, cook the keto kebabs, covered, over medium heat 8-10 minutes or until chicken is no longer pink and vegetables are tender, turning occasionally.
