Smooth & Creamy Cauliflower Mash with Keto Gravy

This creamy cauliflower mash is the perfect keto-friendly side dish to accompany any dinnner recipe. The smooth and delicate texture is very close to real mashed potatoes, but without all the carbs! Add the gravy on top and your family will be begging you to make this over and over again!

Cauliflower Mash

  • 5 cups cauliflower chopped
  • 1/4 cup Heavy Whipping Cream
  • 3 tbsp Butter
  • 5 cloves garlic minced
  • 2 tsp Dried Rosemary
  • 3 tbsp parmesan cheese
  • 1/2 tsp fresh cracked pepper
  • Kosher Sea Salt to taste

Keto-Friendly Gravy

  • cups pan drippings and water or meat stock
  • 1/2 cup onion diced
  • 2 large egg yolks
  • 1/4 cup butter or butter flavored coconut oil
  • salt & pepper to taste


Cauliflower Mash

  • Chop up 5 cups of raw cauliflower.
  • Bring a pot with enough water to cover the cauliflower to a boil, add the cauliflower and boil for 15 minutes or until tender.
  • Drain cauliflower and place in processor.
  • Cook butter, garlic and rosemary in a saucepan over medium heat until fragrant.
  • Add melted butter, garlic and rosemary to processor and pulse several times until well combined.
  • Add cream, parmesan, salt and pepper to processor and process until smooth and creamy.

Keto Gravy

  • Strain pan drippings and add enough water or stock to make 2 cups.
  • Place in a pot and reduce the liquid to thicken a bit by boiling down for about ten minutes.
  • Add onion to liquid and finely puree with a stick blender or high speed blender. Cook the onion for a few minutes to further reduce the liquid.
  • Remove from heat and slowly pour about 1/4 cup of the hot liquid into the egg yolks while whisking to temper them.
  • Gently pour the egg yolk mixture into the hot liquid in the pot while whisking.
  • Continue to whisk and simmer the gravy liquid. Whisk in the coconut oil or butter and stir until smooth. You can continue to simmer. Butter tends to thicken the gravy better than coconut oil, but the gravy will thicken more as it cools with the coconut oil.
  • Spoon out cauliflower mash into individual plates/dishes and ladle over the keto gravy.
