Zucchini Crust Keto Friendly Pizza

  • 2 large eggs lightly beaten
  • 1/4 cup keto-friendly almond flour
  • 1 tablespoon minced fresh basil
  • 1/2 cup shredded part-skim mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon minced fresh thyme
  • 2 cups shredded zucchini about 1-1/2 medium, squeezed dry
  • 1/4 cup black olives chopped
  • 2 Large Plum Tomatoes sliced
  • 1 tablespoon olive oil
  • 1/2 cup sliced turkey pepperoni


  • Preheat your oven to 450 F, and place a pizza stone inside.
  • Mix together the eggs, shredded zucchini, cheeses, almond flour and herbs in a large mixing bowl.
  • Transfer to the “dough” to a well-greased 12” pizza paddle and shape it into a crust.
  • Slide the crust into the oven, onto the pizza stone and cook until it is a light golden brown. This should take about 13-15 minutes.
  • Reduce the temperature of the oven to 400 F.
  • Add the sliced turkey pepperoni, tomato slices, olives, and mozzarella cheese onto the pizza crust, spreading evenly.
  • Bake for about 10 more minutes or until the cheese is nice and melted.
  • Serve hot out of the oven, cut into 6 slices for the best results!
