Vegan Herb Grilled Keto Party Skewers

Since most fruits and vegetables have a high carb count per serving, it can be difficult to prepare a proper vegan meal when on a keto diet. Try out this keto-friendly vegan recipe next for a nutrient loaded option on the grill.

  • 1 Cup Cherry Tomatoes
  • 1 Large Green Zucchini
  • 1 Large Yellow Zucchini
  • 2-3 Pimiento Peppers
  • 1-2 Orange Bell Peppers
  • 1 Cup Cremini Mushrooms
  • 2 Tablespoons Olive Oil
  • 1/2 Teaspoon Dried Oregano
  • 1/2 Teaspoon Dried Basil
  • 2 Teaspoons Lemon Juice
  • 1 Cup of Our Keto-Friendly BBQ Sauce for brushing optional*


  • Pre-heat your grill if using charcoal, or turn on the flame if using gas/propane.
  • If using wooden skewers (we normally use stainless steel for this recipe), soak the skewers completely in a bowl of water for at least 10 minutes.
  • Slice both the green and yellow zucchini into 1/2 inch thick discs.
  • Cut the pimiento peppers in half and remove the seeds. Chop into 1 inch x 1 inch pieces.
  • Cut the orange bell peppers in half and remove the seeds. Chop into 1 inch x 1 inch pieces.
  • Slide all of your vegetables evenly onto the skewers, alternating the colors for the best presentation.
  • In a small bowl, mix together the olive oil, lemon juice, dried oregano and dried basil.
  • Brush the olive oil and herb mixture onto the vegetable skewers before placing on the grill.
  • Arrange the vegan skewers onto the grill, directly over the heat. Grill for 5-8 minutes per side, until you the vegetables are soft, and they have a slight char on the edges.
  • When there are two minutes of grilling left, brush the vegan skewers with the BBQ sauce for an extra boost of flavor and caramelization.
